Union Square Cafe Bar Nuts

There’s never a quiet moment in the gather&be kitchens. If there’s not already something bubbling or baking away, we’re most certainly thinking about what to make next. Today we were thinking of a simple nibble to add to our #Oscarparty. If you’ve ever been to Manhattan’s Union Square Cafe Bar and had their famous nuts, you know exactly what we’re talking about. We’ve added a finishing touch of Maldon Sea Salt, because let’s face it, everything tastes better with Maldon Sea Salt. They’re sweet & spicy at the same time, making your taste buds swoon like they’re swaying along to a Lady Gaga and Bradley Cooper ballad. Just sayin’ - you know who we’re rooting for!


Ingredients:

  • 2-1/2 cups (350g / 12oz.) of mixed, whole nuts, raw and unsalted. We used almonds, pistachios, pecans and cashews but anything goes!

  • 1 tablespoon unsalted butter

  • 2 tablespoons finely chopped rosemary

  • 1/2 teaspoon cayenne pepper

  • 2 teaspoons brown sugar

  • 1 teaspoon fine sea salt

  • 1 teaspoon Maldon Sea Salt


Preheat the oven to 350F (180C) and spread the nuts on a baking sheet. Bake the nuts for 15 minutes, turning them halfway.


Whilst the nuts are in the oven, melt the butter in a small pan. When it has melted add the chopped rosemary, cayenne, brown sugar, and fine sea salt until the sugar has dissolved and it's a beautiful, syrupy symphony. Pour the mixture over the nuts, mix well, sprinkle with Maldon Sea Salt and serve warm. These can be make ahead and warmed again at 300F (150C) for 5-10 minutes.
