A traditional Pico de Gallo is hand chopped, but we were too hungry to wait for that! So we turned to our trusty food processor to do the work for us. The flavors are just as good, but if you’re into chopping by hand, by all means, be our guest!
2 large tomatoes, roughly chopped and seeds removed
1 jalapeño pepper, roughly chopped
1/2 cup cilantro
Juice of 1 lime
Salt to taste
Put the chopped tomatoes, jalapeño, onion and cilantro into the food processor and pulse until all the bits are an even size. Transfer to a medium bowl and add the lime juice and season generously with salt.
This is great with our Huevos Rancheros, tortilla chips or tacos!
