Marinated Feta

This Marinated Feta is one of those recipes you’ll find yourself reaching for again and again! It’s easy to make, tastes amazing and you can serve it with any number of things. We’ve had it crumbled into buttery pasta, served it alongside baba ganoush and hummus on a mezze platter or enjoyed it on top of a colorful salad with arugula, beets, grape tomatoes, sliced radishes and toasted pine nuts. It’s one of those no recipe recipes that you can just throw together with fabulous results!


Ingredients:

  • 2-8oz. blocks of feta (roughly 225g each)

  • 1/2 cup (120ml) extra virgin olive oil

  • zest of one organic lemon

  • 1/2 tablespoon crushed pink peppercorns

  • 1 tablespoon thyme leaves

  • 1/2 teaspoon salt.


Place the feta in a ceramic or glass dish. Drizzle the olive oil over, top with lemon zest, pink peppercorns, thyme and salt. Cover and marinate overnight in the fridge or at least a few hours. You can use the remaining oil of the marinade for the salad dressing, just mix one part oil with two parts apple cider vinegar and you’re ready to go!
