Cruise into the weekend like it’s a fiesta with our simplified Huevos Rancheros. A farm-fresh fried egg on a lightly fried corn tortilla, finished off with our simple Pico de Gallo (or you can just go and buy it!). Avocado slices and our favorite Maldon Sea Salt round off the dish. This is a great breakfast or brunch option for a crowd too, just keep the tortillas warm in a low oven and fry up a batch of eggs.
Ingredients for 2 servings:
2 corn tortillas
1/2 avocado, sliced
Pico de Gallo (buy ready-made or see our recipe here)
Spray a pan with a little olive oil and heat to medium-high. Fry the tortillas and keep warm in the oven on its lowest heat setting.
Next, fry up the eggs to your liking. Place the fried eggs on the corn tortilla and spoon over the pico de gallo & enjoy!
