Citrus Salad

Can we just take a minute please, to admire Mother Nature’s bounty? The winter months are prime time for these gorgeous varieties of oranges, grapefruits and lemons, so let’s enjoy them whilst we can! We are big fans of using citrus fruits and their zest to jazz up everything from salads to baked goods, savory dishes to drinks. The beauty in this sweet Citrus Salad lies in the simplicity of the bare, naked fruit.



You can take any variety of citrus fruit and let their flavors blend into a delightful, refreshing and healthy treat. Enjoy this on its own for brunch, over yogurt for breakfast, or in a coupe with a splash of champagne for a light and elegant dessert. You know we’re always looking for an excuse to add bubbles…


Instructions:


For this particular salad we used 2 sweet Cara oranges, 2 pink grapefruit, 3 small blood oranges and the zest of a lime. We gave it a finishing touch with some fresh mint leaves.

Make sure you squeeze out the juice when you’re done cutting the segments, you want to make sure you have all the good stuff! With a fine grater, zest the skin of a lemon or lime and mix it into the salad. This may seem like an unnecessary step but the zest of these fruits has a very different flavor to the rest of the fruit, elevating the overall dish to the next level! Combine the fruit segments and finish the dish with a few fresh mint leaves. This can be made up to a day ahead and chilled until ready to serve.
