Churro French Toast

We want to make you the most popular person in your family this Memorial Day! How? By making Churro French Toast of course! This is a @delish recipe and we’re living for the crunchy cinnamon sugar crust and soft, pillow-y insides of these babies. The aptly named Insane Icing? Yeah, we could probably eat that by the gallon. Give this a try and see your FAR (Family Approval Ratings) go through the roof!



Ingredients

Makes 8 pieces of Churro French Toast


For the French Toast

6 large eggs

1 1/2 cup (375 ml) whole milk

1 tbsp pure vanilla extract

Kosher salt

1 cup (200g) cinnamon sugar (To make cinnamon sugar, mix 1 cup (200g) granulated sugar with 1/4 cup - 1/3 cup (27 g - 36 g) of ground cinnamon, depending on how cinnamon-y you would like it to be.)

1 tbsp butter

8 slices white bread (we used a hearty white loaf, thicker is better!)


For the Insane Icing


2 tbsp softened cream cheese

1/4 cup (30 g) powdered sugar

1 tbsp whole milk


Instructions


Make French toast: In a shallow bowl, whisk together eggs, milk, vanilla, and a pinch of salt. Put cinnamon sugar in another shallow bowl.

In a large nonstick skillet over medium heat, melt butter. Dip 2 slices bread into egg mixture until soaked through, then add to skillet and cook until golden, about 2 minutes per side.

Remove from skillet and immediately toss in cinnamon sugar. Transfer to a wire rack (do make sure it is a wire rack, otherwise it won't become crisp!) to cool and crisp up while you cook remaining bread slices.

Make Insane Icing: In a liquid measuring cup, whisk together cream cheese, powdered sugar, and milk until smooth. Drizzle French toast with Insane Icing before serving.
