225 g halloumi

7 strips bacon

Preheat oven to 425 F (220 C).

Cut the halloumi block into half lengthwise. Then cut into 1 inch (2,5 cm) strips, so you have 14 halloumi fries. Cut the bacon strips in half horizontally. Carefully wrap a piece of bacon around each halloumi fry.

Place on a baking sheet lined with parchment paper.

Bake for 18-20 minute until the edges of the halloumi are browned. Grill on high for a further 2 minutes to make the bacon crispy.

Serve as soon as cool enough to handle with Green Goddess Dip (see below).

Ingredients Green Goddess Dip

1/2 cup mayo

1 clove garlic

1/4 cup parsley

1/4 cup basil

1/4 cup chives

1/2 tsp salt

freshly ground pepper

Blitz the herbs, garlic and salt in a mini food processor.

In a small bowl, mix the herbs and mayonnaise until well combined. Add freshly ground pepper to taste.

Chill until ready to serve.
