Ricotta, Prosciutto, Spinach and Tart Cherry Toast

Once in a while a flavor combination comes along that you hadn’t thought to try, but now don’t know how you lived without it. Introducing your new favorite: The Ricotta, Prosciutto, Spinach and Tart Cherry Toast. On top of crunchy multi grain toast we’ve piled creamy, fluffy ricotta, a handful of crisp spinach leaves, a few slices of salty prosciutto and a generous helping of mouth-puckeringly tart dried Montmerency cherries. Finished it off with a quick drizzle of vinaigrette made from aged balsamic vinegar and extra virgin olive oil (ratio 2:1) and some coarse sea salt and there you go. You might never have that avocado toast yearning ever again!
