Or are you just in the mood for something a little special? Never fear! Whip up these delicious Breakfast Frittatas and keep everyone happy! Including yourself, because you most definitely deserve it.
Makes 24 Mini Frittatas
Ingredients for Frittatas:
5 eggs
1 cup chopped mushrooms
2 medium shallots, finely chopped
1/2 red bell pepper, finely chopped
1 small garlic clove, minced
1/2 tsp salt
1 1/2 teaspoons olive oil
2 tbsp cream or half and half (you can substitute regular milk)
1 tsp hot sauce
Topping:
4 tbsp chopped chives
3 oz chopped smoked salmon
Otherwise needed:
Mini cupcake pan
Cooking spray
24 cupcake liners
Preheat the oven to 375 F (190 C). In a big bowl, whisk all the eggs and the cream together until well blended. Add all other frittata ingredients and whisk thoroughly. Place the cupcake liners in the cupcake tin and spray each one lightly with cooking spray. This will prevent the frittatas from sticking to the liners. Fill each liner almost full with the egg mixture. It will puff up slightly when baking. Bake for about 15 minutes or until the frittatas still have a slight jiggle. Remove from the oven and let cool. Place a little mound of smoked salmon on each frittata and sprinkle with chives. Serve immediately.
