I’d rather have these 🥃🍒🍫Bourbon Cherry Brownies than roses for Valentine’s. Who's with me?
We want to make sure you have a stellar Valentine’s, Galentine’s or Palentine’s Day, so we’re sharing this recipe with you to help you win over even the most stubborn of hearts. Bourbon soaked cherries in a double chocolate brownie with white chocolate chips for extra va-va-voom. Do we have your attention yet?
Not a baker? No problem! We actually used our favorite brownie mix this time, but feel free to go all out and make it from scratch, here’s our go-to recipe.
To make these, soak dried cherries in bourbon, drain (keep the bourbon!) and mix the cherries into a brownie batter. Use the reserved bourbon instead of the water. (If you’re making it from scratch then you can just drink the bourbon 😁.) To offset the fudginess - the cherries kind of melt into the batter, you won’t be chewing on raisin-y cherries! - we added white chocolate chips for a little bite. Ingredients for 16 brownies
1 box of brownie mix (I love Ghirardelli’s Chocolate Supreme Brownie Mix)
1/2 cup dried cherries, roughly chopped
1/2 cup bourbon
1/2 cup white chocolate chips
Warm the bourbon in a saucepan until hot, but not boiling. Add the cherries and take the pan off the heat. Cover and allow to marinate for at least an hour, or overnight.
When you’re ready to make the batter, drain the cherries and reserve the liquid. Where the mix calls for water, substitute the same amount of the leftover bourbon. Also, I always use melted butter instead of oil in any baking mix for a more delicious result. Finally, fold in the white chocolate chips and bourbon soaked cherries if you haven't eaten them all yet. Bake according to the instructions on the box, allow to cool before cutting into them. Enjoy!
