Forgotten Tomatoes

It's tomato season, and rather than eating Mozzarella & Burrata on repeat, I like to find different ways to enjoy them. These half sun-dried tomatoes add a pop of intense flavour to any dish!


I absolutely love these Forgotten Tomatoes, they pack in a lot of flavour and can be added to pretty much anything. They jazz up any salad, and they are gorgeous with pasta, cheese and sandwiches, too. These are ridiculously quick to prepare, but you'll need to leave them in the oven overnight (no heat, don't worry!).

  • 1 lb. (500g) small organic tomatoes, sliced into wedges, or organic cherry tomatoes, halved

  • 2 tablespoons organic olive oil

  • 2 teaspoons flaky sea salt (we love Maldon), or 1 teaspoon kosher salt

  • ¼ teaspoon sugar

  • 6 sprigs of fresh organic thyme or 1 teaspoon dried thyme


  1. Preheat the oven to 450F/ 230C.

  2. Place the tomato wedges, or halves, in an oven dish. Drizzle with olive oil, sprinkle with salt and sugar. Scatter over the thyme stems.

  3. Put the dish in the oven and turn off the oven right away. Leave the tomatoes in the oven overnight - do not open the door! Wake up in the morning to these gorgeous looking tomatoes and add them to whatever you fancy! Store in the fridge for up to 5 days.
