Forgotten Tomatoes

They say the key to maintaining a healthy diet is Meal Prep Sundays, but personally, I find this really hard to do (Meal Prep Sundays that is 😆). I can’t plan that far ahead, and I certainly don’t want to be eating the same thing three days in a row! That's why I absolutely love these Forgotten Tomatoes, they pack in a lot of flavor and can be added to pretty much anything. They jazz up any salad, and they are gorgeous with pasta, cheese, and sandwiches too. So on Meal Prep Sundays, I will happily prepare these in three minutes flat, in ridiculously huge quantities! xoxo Kirsty


  • 1 lb. (500g) small tomatoes, sliced into wedges, or cherry tomatoes, halved

  • 2 tablespoons olive oil

  • 2 teaspoons flaky sea salt (we love Maldon), or 1 teaspoon kosher salt

  • ¼ teaspoon sugar

  • 6 sprigs of fresh thyme or 1 teaspoon dried thyme


Preheat the oven to 450F/ 230C.


Put the tomato wedges, or halves, in an oven dish. Drizzle with olive oil, sprinkle with salt and sugar. Scatter over the thyme stems.


Put the dish in the oven and turn off the oven right away. Leave the tomatoes in the oven overnight - do not open the door! Wake up in the morning to these gorgeous looking tomatoes and add them to whatever you fancy! Store in the fridge for up to 5 days.
